My Secret Recipe for Waffles

Oh My Word! Waffles

Recipe taken from Fun & Fabulous Grain Free Breakfast Recipes

Oh my word, are these good!
They taste like doughnuts.

Ingredients:

1 cup almond flour
1 cup flax seed meal
1 cup Splenda
4 eggs
½ cup butter
½ cup plus 2 tablespoons water
1 teaspoon cinnamon
¼ teaspoon salt
¼ teaspoon allspice (optional)

Directions:

1. Melt the butter in a large bowl.
2. Add eggs and water, stir.
3. Add all other ingredients and mix well.
4. Cook in waffle iron until done.

Don’t use splenda! Are you serious?!?!? Why make a healthy, great recipe so horrible! If you want ti to be sugar free try using xylitol or coconut sugar or stevia if you’re really serious about the sugar free.

While I agree with Laura, I think it could have been stated a little nicer.

Splenda really can do some yucky things to you. When my step father went off splenda, he lost 10 lbs. right from around his middle. Just from no splenda.

However, we’re all just trying to do the best we can at any given time. So, if you can kick the splenda out, then do it, but if you can’t or don’t want to, then I imagine you’re probably doing *other* things that I’m not. Like eating less sugar! ;)

Everybody has to make these choice for themselves.

Thank you oh-so-much for such a yummy recipe! I will omit the splenda and probably make an agave-sweetened syrup, but I’m so excited to try it!

Catie, you make some very good points. Everyone is so different and responds to foods in very unique ways. For some folks, Splenda may be way better than sugar or honey because they may not tolerate the insulin spike that can happen with straight sugar. For others, the chemicals in the alternative sweeteners may not be so good. It really depends where you are in your health journey.

When I was getting off wheat and corn, I found recipes using Splenda worked really well to help me with the transition.

Hope I can make this post as someone who just googled you! I.was wondering if Stevia in the Raw could be subbed for the Splenda. I have some issues with using it in my diet.

Hi Sandy!
Absolutely, you can substitute any sweetener you desire. You will need to be mindful that not all sweeteners have the same strength so they may not swap out at a 1 to 1 ratio. Thanks for your comment and let me know if there is anything else you need help with!
