Chia fried eggs were on the breakfast menu this morning. I’ve been trying lots of new and different ways to add chia seeds to my grain free diet, so I thought I would give this a whirl.
This breakfast would be fine for anyone on a grain free, gluten free or Paleolithic diet.
As you can see in the picture, I simply cracked a few eggs in a hot pan and then sprinkled chia seeds right on top. I did not get it very uniform, but that’s okay. It was good.
The seeds stayed a bit crunchy – they did not get that gelatinous gel around them that they normally get when mixed with a liquid. I liked it. It reminded me a bit of the way my kids used to like to eat eggs. I would toast some bread, then tear it up into small bits in a bowl and drop a few over-easy eggs on top and mush it all together. That crunchiness was not quite the same as toast, but definitely reminiscent of it.
Give it a try and see what you think. I will attempt scrambled eggs here in the next few days. We will see what that is like.
I think I still prefer to have my chia seeds in my coffee, simply because it makes it so much fun to eat. But if you don’t like the way they feel in your mouth, try adding it to your eggs. It has an entirely different feel, but you are still getting all the wonderful nutrition goodness that chia seeds have packed inside.
